Lamb and Agen prunes Tajine

- 1,5 kg shoulder of lamb
- 500g Agen prunes
- 40cl of hot black tea
- 2 big sweet onions
- 2 potatoes
- 3 cloves of garlic
- 1 teaspoon of cumin powder
- 1 teaspoon of cinnamon powder
- 1 teaspoon of grated ginger
- 3 tablespoons of honey
- ½ teaspoon of ground coriander seeds
- 1 pinch of saffron
- 100g of peeled almonds
- Olive oil
- Salt and pepper
- Prepare the ingredients: put Agen prunes into hot black tea for 30 minutes. Peel onions and cut roughly, peel garlic and cut finely. Cut potatoes in pieces. Cut lamb in rough pieces and wrap in some salt. Cut coriander finely.
- Heat some olive oil in a tajine. Brown the lamb on a high oven for 6-8 minutes. Remove the lamb from tajine.
- Add onions and brown for 3-4 minutes. Put lamb back over the onions and add potatoes.
- Add spices, garlic and honey. Cover with water and mix all the ingredients. Cover and cook on a low oven for 1h15.
- Strain Agen prunes and add them to the tajine. Cook for another 25 minutes.
- Brown the almonds in a pan with some olive oil. Add almonds and coriander in the tajine. Salt and pepper.
- Cook for another 5 minutes without cover.
