Potaotes stuffed with Agen prunes

  • Cooking time: 25 minutes
  • Grade of difficulty: very easy
    • Ingredients:

      • 800g small potatoes
      • 100g diced bacon (smoked or not)
      • 100g stoned Age, prunes
      • 60g butter
      • 1 chicken stock
      • 2 shallots
      • 2 parsley leaves
      • 1 branch of thyme
      • 1 bay leaf
      • Salt and pepper

          • Peel the potatoes and shallots, cut the shallots in half.
          • In a pan, fry diced bacon without fat and remove from pan. Put potatoes and shallots in the pan. Add butter, thyme, bay and chicken stock. Cover with water, wait for boiling and cover.
          • Cook for 10 minutes on a medium oven. Add Agen prunes.
          • Salt and pepper, cook for another 10 minutes.
          • When potatoes are tender and liquid is evaporated, add diced bacon and cook on a high oven for 2 minutes.
          • Decorate with parsley.
