Roasted Agen prunes with Roquefort, rolled in cured ham

Ingredients:

  • 24 big Agen prunes
  • 150g of Roquefort cheese
  • 4 slices of cured ham
  • 200g of lamb’s lettuce
  • 50g of shelled walnut
  • 2 tablespoons of balsamic vinegar
  • 20ml of olive oil
  • Parsley leaves
  • Salt and pepper

    • Prepare the ingredients: stone Agen prunes, wash and spin dry lettuce, cut each slice of ham in 4 strips. Work Roquefort cheese with a spoon to make it smooth. Cut the walnuts roughly. Preheat the oven at 150°C (th. 4/5)
    • Stuff each Agen prune with Roquefort and wrap into a strip of ham.
    • Put on a baking sheet and bake for 6 minutes.
    • Meanwhile, make the vinaigrette: vinegar, olive oil, salt and pepper.
    • Put on each plate some lamb’s lettuce, pour vinaigrette and walnut.
    • Put hot prunes near the lettuce.
